One of the signatures of Hong Kong street food. The spicy juicy flavor it brings makes it very popular.
As you might know this is a Dim Sum, however, they sell it on the streets also but mostly the Fish Siu Mai instead of the Pork or shrimp.
Pork rind is the skin of a pig. It sounds disgusting eating skin but it taste very good as it absorbs the sauce and soup making it very juicy.
Many foreigners refuses to try this but I definitely recommend you trying it at least once. It taste way better than it looks.
